
Chef John Mairleitner’s cooking demonstration featuring local foods has become a tradition at the Wallacetown Fair. It’s a family affair with John's three daughters helping out. This year’s audience was treated to a demo of Pear & Apple Crumble and many an appreciative, “Mmmmmm” was heard as they enjoyed still-warm samples of the treat. See the recipe below.
PEAR & APPLE CRUMBLE
Filling
6 - 8 large apples
10 - 15 large pears
1 ½ - 2 cups white sugar
1 cup all-purpose flour
1 - 2 tsp cinnamon
Topping
3 cups rolled oats
2 cups brown sugar
2 cups all-purpose flour
1 tsp baking soda
1 ½ cups melted butter or margarine
Combine topping ingredients: oats, brown sugar, flour, baking soda and margarine and mix till well blended.
Peel apples and pears and mix together with sugar, flour and cinnamon. (You can leave peel on pears if you like).
Grease a 9” x 13” glass or metal baking pan.
Add filling to pan and pack down. Add crumble topping and bake at 350°F for 30 to 45 minutes or until done.
